Salmon Sushi Cake

General
Think of it as sushi for a crowd: seasoned sushi rice pressed into a springform pan with layers of nori and avocado, topped with a ring of sashimi-grade salmon and black sesame seeds. Roasted sweet potato rounds go around the base, with soy sauce, ginger and wasabi served on the side. Fold the vinegar, sugar and salt into the rice while it's still warm, then let it cool to room temperature before you start layering.
Servings: 6 · Time: 50 min
- 2 Cup Sushi Rice
- 3 Tablespoon Rice Vinegar
- 1 Tablespoon Sugar
- 1 Teaspoon Salt
- 300 Gram Sashimi-grade Salmon
- 1 Teaspoon Black Sesame Seeds
- 1 Unit Avocado
- 2 Unit Nori Sheets
- 2 Unit Sweet Potato
- 1 Tablespoon Olive Oil
- Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions.
- While the rice is still warm, gently fold in the rice vinegar, sugar, and salt. Allow it to cool to room temperature.
- Preheat your oven to 400°F (200°C). Slice the sweet potatoes into 1/2-inch thick rounds. Toss with olive oil and a pinch of salt, then roast for 20-25 minutes until tender and slightly caramelized.
- Prepare the filling by slicing the avocado into thin wedges and cutting the nori sheets into circles that fit your mold.
- Slice the sashimi-grade salmon into thin, uniform strips.
- Using a circular mold or springform pan, press half of the seasoned rice into the bottom to create an even layer.
- Place a layer of nori over the rice, followed by a layer of avocado wedges.
- Add the remaining rice on top of the avocado and press down firmly to stabilize the cake.
- Arrange the salmon slices on the top layer of rice in a circular, overlapping pattern, leaving a small decorative opening in the center.
- Sprinkle black sesame seeds over the salmon for garnish.
- Carefully remove the mold and arrange the roasted sweet potato rounds around the base of the sushi cake.
- Serve immediately with soy sauce, ginger, and wasabi on the side.
