Chicken Schnitzel with Simple Slaw

Chicken
Here's a weeknight-friendly plate: chicken breasts pounded thin, breaded through flour, egg and breadcrumbs, and pan-fried until golden, next to a quick cabbage-and-carrot slaw dressed with mayonnaise, apple cider vinegar and a little sugar. Pounding each breast to about 1/4 inch between sheets of plastic wrap gives you cutlets of even thickness. Don't overcrowd the skillet, and drain the schnitzels on a wire rack lined with paper towels so the coating stays crisp.
Servings: 4 · Time: 30 min · Difficulty: Medium
- 2 Unit Chicken Breasts
- 0.5 Cup All-purpose Flour
- 2 Medium Medium Egg Eggs
- 1 Cup Breadcrumbs
- 0.5 Cup Vegetable Oil
- 1 Teaspoon Salt
- 0.5 Teaspoon Black Pepper
- 0.5 Celsius Green Cabbage
- 1 Celsius Carrot
- 0.5 Cup Mayonnaise
- 2 Celsius Apple Cider Vinegar
- 1 Teaspoon Sugar
- Prepare the chicken breasts by placing each between two sheets of plastic wrap and pounding them to about 1/4 inch thickness.
- Season both sides of the pounded chicken with salt and pepper.
- Set up a breading station: one dish with flour, one with beaten eggs, and one with breadcrumbs.
- Dredge each chicken cutlet in flour, then dip in beaten egg, and finally coat thoroughly in breadcrumbs.
- Heat vegetable oil (or oil/butter mix) in a large skillet over medium-high heat until shimmering.
- Carefully place breaded chicken cutlets in the hot oil, ensuring not to overcrowd the pan.
- Cook for 3-4 minutes per side, or until golden brown and cooked through.
- Remove schnitzels to a wire rack lined with paper towels to drain excess oil.
- For the slaw, combine finely shredded cabbage and shredded carrot in a large bowl.
- In a separate small bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper for the dressing.
- Pour the dressing over the cabbage and carrot mixture and toss until well coated.
- Serve the crispy Chicken Schnitzel with the Simple Slaw.
